Blog Archive: The Banana-Nut “Bread” Remix Dessert Goodness Recipe ;)

One of my favorite monsters and certainly a “foundation” recipe that can be tweaked in any direction. I would suggest adding a variety of fruit, coconut, increasing egg content or whatever your little paleo hearts desire. This is great to sometimes use as an “on the go” breakfast dish (however based on your ratio of ingredients), or adding dark chocolate to create a fabulous dessert item (for those who, of course, are stable enough for moderately increased sugar intake– but who here is actually considered stable?).
Overall, easy and delicious– but be careful not to over eat!

Jamby’s Banana Nut Bread Remix Recipe
INGREDIENTS:
- 4 bananas
- 2-3 eggs
- 2 1/2 large tbsp almond butter
- 3 large tbsp apple sauce (check label!)
- frozen blueberries
- 2 large dates torn into pieces (optional)
- whole blueberries (as many as you like)
- cinnamon
- tons of strawberries
Pre-heat oven to 350 degrees.
In a mixing bowl, peel and mash up bananas. Add almond butter and mix. Next, add the eggs, and mix well until very smooth and batter-like. Add the apple-sauce. Stir. Add the blueberries and (torn) dates. Stir. Add the cinnamon to your liking. Mix everything very well (have I said that enough?).
Finally, coat your appropriate cooking dish (I use casserole dish) with coconut oil (I’m trying to stay away from PAM or any other Canola/vegetable oil based cooking sprays). Add the “batter” to the dish, cut up strawberries and pile them neatly on top (basically, create a layer of strawberry).
Put dish into the oven and cook until strawberries are almost bubbling (about 30-45min). Once finished and cooled, place in the fridge for about an hour before serving.
