Spaghetti Squash “Ziti” Bake with Pork Spare Ribs!

Allow me to introduce one of the weekend foodie projects turned exceptional dinner fiesta (with leftovers to “spare” … pun definitely intended).

Spaghetti Squash “Ziti” Bake with Pork Spare Ribs Recipe

Ingredients:

1-2 jars NON-TRASHY TOMATO SAUCE (or, you can make your own – recipe here)
2-3lb pork spare ribs
2 medium spaghetti squash, cooked and spaghetti-fied (recipe here)
1 canister ricotta cheese (omit if you do not eat dairy)
2-3 garlic gloves, minced
garlic salt
pepper
parsley

1) Begin to brown spare ribs in a large, heavy bottomed pot over medium-high heat. Cook until mostly done.

2) Pour all tomato sauce into the pot and let simmer with the ribs over medium heat. Leave for 10-15 minutes. Add spices if necessary.

3) Pre-heat oven to 350. In a separate mixing bowl, pour in all ricotta cheese and add minced garlic, salt, pepper, and parsley to taste. Mix.

4) Into the mixing bowl, little by little, add all spaghetti squash. Mix until uniformly touched by the ricotta.

5)  In a deep baking pan, take from the original mixing bowl to create 1 layer of the spaghetti squash & ricotta mixture. On top of this, add a layer of tomato sauce. Repeat with another layer. Keep in mind to leave spare ribs on the side.

6) In the 350 degree oven, place spaghetti squash, ricotta and sauce layer creation for about 35-45 min. Remove when crispy/bubbly and serve with spare ribs.
